Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract

  • 1 cup grated carrots

  • 1 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 15×10-inch jelly roll pan with parchment paper, greasing it lightly.
  2. In a large bowl, whisk together the eggs and granulated sugar until light and fluffy. Stir in the vanilla extract.
  3. In another bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the egg mixture, mixing until just combined. Fold in the grated carrots and nuts if using.
