Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • Chocolate shavings or sprinkles for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Make the Cake Batter: In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Mix until well combined. Carefully stir in boiling water until the batter is smooth.
  3. Bake the Cakes: Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  4. Prepare the Filling: In a medium bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  5. Assemble the Cake: Once the cakes are cooled, place one layer on a serving plate. Spread the whipped cream filling on top, then place the second layer on top.
  6. Make the Ganache: In a small saucepan, heat 1/2 cup of heavy cream until simmering. Remove from heat and stir in chocolate chips until melted and smooth.
  7. Frost the Cake: Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides. Garnish with chocolate shavings or sprinkles, if desired.
  8. Serve: Slice and serve the Ho Ho Cake chilled or at room temperature. Enjoy!
